La Fallas de Valencia without a shadow of a doubt, are one of the most spectacular fiestas on earth. They take place March 15th through the 19th and are intended as a tribute to St. Joseph, patron saint of the carpenters' guild that started the springtime custom of burning torches and assorted waste from their workshops.
